What is Pastrami?
Pastrami is a Romanian dish. Typically, the meat is made with beef brisket. However, it can also be made with pork, lamb, or turkey. Sometimes, what it is made out of depends on your region. Before refrigeration was a thing, butchers made pastrami to preserve the raw meat that they cut but did not end up using it right away. They would leave their meat of choice out to dry, which would later be seasoned, smoked, and steamed.
The Origins.
It is said that pastrami was introduced around the 19th century when a wave of Romanian Jewish immigrants came to America. During that time, the meat was called “pastróme” and was commonly referenced as “pastrami.” After many years of the word and pronunciation changing, we have the current form of the word.
The Creation of the Hot Pastrami Sandwich.
In 1887, a New York kosher butcher by the name of Sussman Volk was credited with making the first pastrami sandwich. However, the story goes deeper than that as he was not the first ever to make the sandwich. In fact, he gives credit to a friend in Romania as he gave the recipe to Volk. Thanks to the popularity, Volk shifted his butcher shop into a restaurant that exclusively sold the signature pastrami sandwich.
